* Ingredients
1 Onion - large size, grated or finely chopped
4 tbsp Corn Oil Afia AFIA
Sunflower Oil Slite - for deep frying
3 -4 tbsp Turmeric
4 cups Water - boiling
1/2 cup Almonds
1/2 cup Raisins
1/2 cup Hazelnut - blanched
2 Fish - medium size, any kind
1/2 cup Pine Nuts
Salt and Pepper
3 cups Egyptian Rice
* Directions
1.Preparing fish
◦Clean and wash fish.
◦Fry fish in oil until golden brown. Drain on kitchen paper and leave to cool.
◦Remove skin and bones from fish and take out cubes from the fish flesh using your hand and set aside.
◦Fry raisins, pine nuts and hazelnut in oil separately until golden. Mix with fish cubes and set aside.
2.Preparing rice and serving the dish
◦In a medium deep non-stick pan, heat 4 tbsp oil over medium-high heat. Add onion and stir until golden.
◦Add boiling water, salt, pepper and turmeric. Leave to boil for about 10 minutes.
◦Wash rice well under running water and drain. Add rice to pan and stir until water is almost absorbed.
◦Cover pan, move to low heat and leave rice to cook for 20-25 minutes.
◦In the meantime, boil almonds in water for about 15 minutes. Peel and split each almond in half. Fry almonds in oil until golden.
◦In a medium deep pan, put half the quantity of rice and press well. Add fish and nuts to form a layer, then add the rest of rice and press again. Even the surface of rice with the back of a spoon.
◦Put a serving platter on top of the pan, invert the pan so that rice is placed on the platter preserving its shape. Sprinkle fried almonds on the surface.
Tips
" •You can use any kind of leftover fish in this recipe.
•You may need to put more or less quantity of water on the rice depending on the kind you use. "
